Nutritional Information – Summer 2015 Menu Week 5

We know that busy lives are often filled with dietary restrictions as well, which is why we’re pleased to offer this section with nutritional information. Note that amounts listed in the labels are approximate.

All of our meals are available with meat, vegetarian, vegan, or gluten free, and we can accommodate a number of intolerances, including dairy. We want you to have fresh and healthy meals no matter what your dietary restrictions might be.

Miso Soba Soup

 

Miso Soba 1We pump up the volume on this miso soup with soba noodles, shiitake mushrooms, bok choy, green onions, garlic, ginger, and a little sesame oil. Made with gluten-free miso and our own vegetable broth.

We offer this soup with your choice of chicken or tofu.

Gluten free = sub rice noodles

Mediterranean Farro Salad

Farro Salad

For this fresh mediterranean salad, farro is mixed with green beans, diced red bell peppers, kalamata olives, and our homemade dressing with dijon, sherry vinegar, and olive oil. All topped with pine nuts and chives.

Tasty warm or cold!

Vegan: Served with our vegan feta (made from tofu)
Vegetarian: Topped with feta cheese
Meat: Topped with tender shredded chicken and feta cheese

Polenta Pizza

Summer Polenta Pizza

A crispy corn polenta pizza crust is loaded with caramelized onions,
arugula, and fresh figs.  You are gonna want a knife and fork this
one!  

Served with a side of roasted balsamic beets.

Vegan: Served as listed above.
Vegetarian: Same as vegan but topped with brie cheese.
Meat: Topped with brie cheese and pancetta

Your choice of tofu or chicken thighs marinated in a blend of tamari, tomato paste, maple syrup, lemon, sherry, garlic, and ginger. Served with onion and topped with fresh parsley.

Served with a side of Hawaiian Slaw with cabbage, carrot, pineapple, papaya, green onion, oil & vinegar.

Vegan/Vegetarian: Served with tofu
Meat: Served with chicken thighs

Cabbage, bell pepper, carrot, zucchini, garbanzo beans, green onion, and mint are mixed with angel hair pasta and our flavorful coconut curry dressing (dressing contains sesame tahini & coconut). Served with your choice of tempeh or chicken.

Brown rice, lots of spinach, olive oil, garlic and sun-dried tomatoes are mixed with fresh basil and parmesan. Served with your choice of beef meatballs (contain tamari & oats) or eggplant balls (contain almond meal & chia seeds) and a side of roasted broccoli.

Vegan: Served with eggplant balls & nutritional yeast in place of the parmesan
Vegetarian: Served with eggplant balls & parmesan cheese
Meat: Served with ground beef meatballs & parmesan cheese

Japanese Yakisoba

 

Japanese YakisobaSome of you may remember sweet Caitlin who worked in the kitchen with us and moved to Japan. She still works with us from afar and sent this awesome recipe for Japanese Yakisoba for all the Freshies to try!

Soba noodles mixed with sesame oil, cabbage, shiitake mushrooms, onion, carrots, garlic, and ginger mixed with house-made Yakisoba sauce with tamari, tomato paste, maple syrup, rice vinegar, ginger, and garlic. Served with your choice of meat or tofu.

Vegan/Vegetarian: Served with tofu
Meat: Served with steak
