Nutritional Information – Summer 2015 Menu Week 6

We know that busy lives are often filled with dietary restrictions as well, which is why we’re pleased to offer this section with nutritional information. Note that amounts listed in the labels are approximate.

All of our meals are available with meat, vegetarian, vegan, or gluten free, and we can accommodate a number of intolerances, including dairy. We want you to have fresh and healthy meals no matter what your dietary restrictions might be.

Salsa Verde Soup

 

Salsa Verde SoupOur house-made salsa verde (tomatillos, serrano chiles, onion, garlic, and cilantro) is mixed with vegetable broth, avocado oil, white beans, lime juice, fresh oregano and cilantro.

We will be serving this soup with a side of queso freso and tortilla strips for topping!

Palak Paneer

The cheese-eating freshies are in for a treat! We are making our own Paneer cheese for this dish!!

Spinach, tomatoes, onions, garlic, and coconut cream are simmered with flavorful seasonings like garam masala, and topped with a little fresh cilantro. Paneer cheese or tofu is mixed into the dish and served over colorful tumeric rice.

Vegan: Served with tofu
Vegetarian: Served with Paneer cheese
Meat: Served with chicken and Paneer cheese

Fresh summer mangos make this dish a winner! Israeli couscous is mixed with fresh mangos, cilantro, sesame oil, and lime juice. Topped with your choice of seasoned tofu or delicious sea bass. This dish is pretty, summery & yummy!

Manicotti

Manicotti 2We did a lot of grain free/gluten free this season so we’re gonna be a little bad…but we’ll counteract it a little with homemade marinara and a tossed side salad!

Manicotti noodles are filled with ricotta cheese or macadamia nut ricotta (for dairy free), mushrooms, garlic, and spinach. Topped with our own marinara sauce and served with a fresh side salad and lemon vinaigrette. Mangia!

Vegan: Noodles are filled with our macadamia nut ricotta (a blend of macadamia nuts, cauliflower, lemon, garlic and seasonings)
Vegetarian: Noodles are filled with ricotta cheese
Meat: Served with chicken sausage and noodles are filled with ricotta cheese

Gluten Free = sub gluten free noodles (may not be manicotti noodles)

Remember your favorite spinach salad from your favorite lunch place? Loaded with bacon and eggs and blue cheese? We’ve re-created the popular dish with a healthy and delicious spin. Fresh spinach, red onions, and cherry tomatoes are mixed with seasoned roasted chickpeas, spiced maple walnuts, and our own balsamic dressing.
